I think I would just as soon sign up for an organized tour rather than to try to find a travel partner. After all, these travelers are also happy to have partners along, as they are mostly new to a country, as well.
The only way to get 'authentic' food is to eat it in the country where it originates. All of the other countries adapt their own versions of the dish. I love it when I cook something that I believe is a certain native dish, and someone else tells me I am making it wrong. I am pretty sure we are...

I don't think there are any more eels in Indian waters than anywhere else. You should educate yourself on the lacation where you wish to swim. Every place is different, and the natives should be able to tell you what you need to know.
Wouldn't it depend on what type of food you are looking for? Eveing.ryone's tastes are different. Although, when I travel, I prefer to eat native food of the place that I am visit
