Jaebi is a mixture of Maida flour and yoghurt. It's category is Fried/Sugar Syrup based. To me it looks more like a donut or a funnel cake rather than a pretzel. What do you think?
I would say if you are comfortable doing these things then do them. I would eat and shop in places that are well populated though. You are a brave lady traveling alone like this. I would always like to have a companion with me.
I had not thought about teas and spices jnorth88. That would be a good gift also and might even cover your male friends. Especially the spices. The scarves and shawls are a given for the ladies though.
I understand there's quite a nightlife in Shillong. Are you into that sort of thing? It's also touted at the tourist capital of the east. Shopping is supposed to be good and of course there are all the tourist attractions.
I would just give them a little extra tip rather than try to give a gift. If this sort of thing is necessary then how about buying them a drink or a snack while on the tour. That should be sufficient.

The foothills of the Himalayan Mountains look like a wonderful place to go. Since I'm traveling with children I have read that there is lots to do and see there including the Corbett National Park. Has anyone ever done this that could tell me a little about it?

These are all incredibly beautiful. Jog Falls reminds me a lot of Niagara Falls here in the States. Do any of the planned tours include some of these falls? The pictures would be awesome.
The hotels in India are most likely popular chains that are found all over the world. They will provide all your essentials but like others have said here, if you prefer a particular brand you should probably bring it with you.
