So, I love barfi. I love the taste and the variety, and make it at home. It always reminds me of India and some great memories. But I had a variety which I just cannot seem to replicate. I think that it added some sort of flour to the condensed milk, but I am unsure of the type. It was a coconut barfi, and wonder if anyone knows what it might have included?
Coconut Barfi is easy to make. Keep a tray well greased. Heat pan add ghee, add dessicated coconut and sugar 2:1 ratio add roasted cashewnut bits. Add half cup of milk cream. Stir on slow fire until the mixture turns gooey. Add whatever flavour. Cardamom tastes better. Pour quickly in that greased pan level it and cut the barfi into pieces and do not forget to eat the delicious barfi Image Source: wikimedia commons
