I'm planning on making sure my whole family has the numbers for the hotels where we'll be staying and the consulate, but what are some other phone numbers we should all have while we're there? Is there a countrywide number that covers most emergencies (like 911 in the U.S.)?

This is definitely a good idea and I'd give the emergency numbers to relatives just in case. The number for emergencies is 108, for the police 100 and for ambulance 102. I'm not sure if those numbers are for every where. Maybe someone on here can let us know.

100 is for Police and works from anywhere in India
101 is for Fire department (works everywhere in India)
102 is for ambulance (works everywhere in India)

108 is an emergency response number for all the above three services but it is only operational in some states so I won't recommend it unless you know for sure that it works in the area you are traveling.
